Working from the lowest position in the kitchen right up to Executive Chef position over the course of my career, to managing a team of 30 chefs across three kitchen's on Lord Marche Estate at The Goodwood Hotel.
Opening the Royal Shakespeare Theatre in 2010 as Executive Chef having the honor of cooking for the Queen on the her state opening of the RSC Theatre in 2011.
Always looking for new ideas, produce and food to keep the journey going..
For me, cooking is...
Is about family, sharing, friends and enjoyment without those four elements then what's the point of food
I learned to cook at...
Still learning each time you do a dish there are subtle changes, temperature, cooking time, taste every kitchen is different..
A role model in the kitchen is...
A bit left field but Hugh Fernley Whittingstall, he made a difference in how the country thinks about fish meat and vegetables
A cooking secret...
Preparation, organised, salt pepper and lemon never leave home without them
