I've been a professional chef now for 6 years. I started my career working at Rushton Hall in their previously 3 Rosette Modern Fine Dining restaurant. I've since worked at a modern deli & rotisserie cafe in Melbourne before returning to Rushton Hall, thereafter I started my business Penman Catering Ltd which has been running successfully for over a year now.
I currently cook in private households for anywhere between 1 and 30 people. I create bespoke dining menus for every event which focus on modern British/European cuisine which is heavily influenced by French technique. Where possible I try to incorporate baking and charcuterie practises into my cuisine.
